Ingredients
2 (300g) duck breasts, skin on
For the marinade
2 tbsp oyster sauce
1 tbsp Chinese five spice powder
1 tbsp groundnut oil
2 tbsp light soy sauce
2 tbsp Shaosing rice wine
For the salad
1 tbsp hoisin sauce
80g watercress leaves
1 cucumber, middle discarded and sliced into strips
1 handful of bean sprouts
1 medium carrot, julienne
1 spring onion sliced
Method
1. Marinade the duck for 20 minutes then place on a roasting tray and roast in the oven at 180°C for 20 minutes.
2. Remove and let it rest for 10 minutes. Then remove the skin, slice and shred with your fingers. Retain the marinade.
3. Heat the leftover marinade and bring to the boil. Take off the heat and let it cool.
4. Into a bowl, toss the salad ingredients together and add the duck and hoisin sauce and the cooled marinade. Mix well and transfer to a serving plate and serve.
